Chocolate Marshmallow Fluff Cupcakes

I've been experimenting with quite a few different cupcakes this week as I've had quite a few orders yayyyy and had a few cupcakes left over so I decided to try some different things with them :D. I've had a big jar of Marshmallow Fluff in the cupboard for quite a while now since I bought some in the States..its far too expensive over here..about £3.00 a jar!! Anyway I had some chocolate cupcakes left over and decided to top them with a rich gooey topping of Marshmallow Fluff, after I'd spooned that on and spread it about the top of the cuppie cake, I topped it with melted chocolate and then covered it in multi coloured sprinkles. I think these look a bit like a hot fudge sundae cupcake and I wish I'd had some glace cherries to top them with to give them the ultimate sundae look hehe!

Chocolate Marshmallow Fluff Cupcakes

Chocolate Cupcakes
115g unsalted butter, at room temperature
130g white granulated sugar
3 large eggs
1 teaspoon vanilla extract
170g plain flour
200g milk chocolate, melted
60g cocoa powder
1/2 teaspoon baking powder
1/4 teaspoon salt
40ml milk
1 teaspoon vanilla extract
Marshmallow Fluff
100g milk chocolate, melted

1. Preheat the oven to 175C and line a muffin tin with liners.

2. Cream the butter and the sugar together in a large bowl until light and fluffy, this should take about 3 minutes. Add the eggs one at a time, beating well after each addition. Stir in the melted chocolate until well incorporated into the mixture.
3. In a separate bowl combine the flour, baking powder, cocoa powder and salt. Add the dry ingredients to the butter and egg mixture, alternating with the milk.. Beat in slowly until just combined, be careful not to overbeat!
4. Fill the muffin liners and bake for 18-20minutes or until a toothpick is inserted into the middle and comes out clean. Allow to cool in muffin tin for 5 minutes and then turn out onto a wire rack until completley cool.
5. Top with a spoonful of marshmallow fluff and drizzle with the melted chocolate.

Only a bite into this will satisfy my curiosity of how all different layers will gel together deciliously... so may I? :-)

You could put a graham cracker crust on the bottom and call it a s'mores cupcake!
